Ingredients
Poached Shrimp
- 500g green prawns
- 8 cups water
- 1 lemon cut in half
- 2 cloves garlic, smashed
- 1 bay leaf
- 1/2 tbsp ground cumin
- 1 tbsp sweet paprika
- 1/2 tbsp chilli powder
- 1/4 tsp cayenne pepper
- 2 tsp freshly ground pepper
- 1.5 tbsp salt
Dipping Sauce
- Hot to Trot
Instructions
- Add 8 cups of water to a large pot. Place pot on stove over high heat.
- Add lemon halves, garlic and spices. Bring liquid to a rolling boil.
- Peel shrimp or leave in tact depending on preference.
- When water has reached a rolling boil, remove the pot from heat and immediately submerge prawns into water.
- Set a timer and cook poach for 3 minutes (adjust depending on size of prawns).
- Use tongs or slotted spoon to transfer prawns to a plate and then place in fridge immediately to cool, or plunge into a prepared ice-water bath.
Notes
Poaching liquid can be used for more than 500g prawns, however we recommend poaching 500g at a time and then returning pot to stove to bring back to rolling boil before poaching the next batch of prawns.
