A fun take on a classic bean salad. Enjoy this versatile sweet and spicy dish that can be served as a salad or a dip!
Ingredients
Cowboy Caviar
- 1 can black beans
- 1 can Borlotti beans
- 1 can cannellini beans
- 1.5 cups thawed frozen corn
- 1.5 cups chopped tomatoes
- 1 capiscum chopped
- 3/4 cup chopped red onion
- 1/3 cup Cowboy Candy chopped
- 1 avocado chopped
- 1/2 cup chopped cilantro (optional)
Dressing
- 1/3 cup olive oil
- 2 tbsp Cowboy Candy brine
- 1 tbsp apple cider vinegar
- 1 tsp salt
- 1 tsp honey or Hot Honey
Instructions
- In a large bowl combine beans, corn, tomatoes, capsicum, red onion, Cowboy Candy and cilantro (as desired)
- In a small bowl whisk together all ingredients for dressing
- Drizzle dressing over cowboy caviar and toss well to combine
- Let marinate for at least 20 minutes
- Add chopped avocado right before service to prevent browning
