Cowboy Caviar

A fun take on a classic bean salad. Enjoy this versatile sweet and spicy dish that can be served as a salad or a dip!

Ingredients

Cowboy Caviar
  • 1 can black beans
  • 1 can Borlotti beans
  • 1 can cannellini beans
  • 1.5 cups thawed frozen corn
  • 1.5 cups chopped tomatoes
  • 1 capiscum chopped
  • 3/4 cup chopped red onion
  • 1/3 cup Cowboy Candy chopped
  • 1 avocado chopped
  • 1/2 cup chopped cilantro (optional)
Dressing
  • 1/3 cup olive oil
  • 2 tbsp Cowboy Candy brine
  • 1 tbsp apple cider vinegar
  • 1 tsp salt
  • 1 tsp honey or Hot Honey

Instructions

  1. In a large bowl combine beans, corn, tomatoes, capsicum, red onion, Cowboy Candy and cilantro (as desired)
  2. In a small bowl whisk together all ingredients for dressing
  3. Drizzle dressing over cowboy caviar and toss well to combine
  4. Let marinate for at least 20 minutes
  5. Add chopped avocado right before service to prevent browning
