Hot Honey Buttermilk Fried Chicken

The ultimate pairing of crispy fried chicken and sweet and spicy Hot Honey.

Ingredients

Chicken
  • 1.5kg chicken pieces
  • 1 tsp black pepper
  • 1 tsp salt
  • 1 tsp paprika
  • 1/2 tsp white pepper
  • 1/4 tsp cayenne pepper
  • 2 cups buttermilk
  • Neutral oil for frying
Flour Coating
  • 2 cups flour
  • 1 tsp salt
  • 1/2 tsp paprika
  • 1/2 tsp cayenne
  • 1/2 tsp garlic powder
  • 1/2 tsp white pepper
  • 1/2 tsp onion powder

Instructions

  1. Toss chicken in bow with black pepper, salt, paprika, white pepper and cayenne
  2. Stir in buttermilk until chicken is evenly coated, cover and refrigerate for 6 hours
  3. Combine flour coating ingredients in shallow dish
  4. Remove chicken from buttermilk and dredge in flour coating until fully covered, shake off excess and place on plate
  5. Heat oil in large pot (preferably dutch oven) to 175 C
  6. Add chicken pieces and fry for 10 minutes, then flip and fry for a further 10 to 15 minutes until the internal temperature of the chicken reaches 74 C
  7. Transfer to cooling rack placed over a baking tray and let rest for 10 minutes
  8. Place on serving dish, drizzle with Hot Honey and enjoy!
